Simple, inexpensive, and it WORKS December 31, 2008

I read a review of the AccuSharp Knife Sharpener that gave it very high marks. Having found it on Amazon I immediately purchased one. It works very well, sharpening every knife in my kitchen. The finger guard looks flimsy but it works. The AccuSharp is lightweight yet sturdy and looks like it will last at least as long as my current set of knives. I recommend this product because it does its job well at a very reasonable price.
Easy to use manual knife sharpener December 28, 2008

I was reading a cooking magazine that reviews products. In the issue I was reading, they were comparing different knife sharpeners. This was their favorite hands down. The same company makes an electric knife sharpener for $159.00, but they liked this $10 manual one better. It works well. I used it on a knife that has been dull for several years and it brought it back to life.

Some of my favorite kitchen knives had become dull and unsafe to use. In search of a knife sharpener, I started my research on the Amazon website. Based on the reviews of this sharpener, I decided to purchase it, and I am satisfied with the performance. All the knives that I sharpened came out really sharp. All it takes is just three or four swipes of the knife on this sharpener.

The good:
+ Really shaves metal, very easily and quickly (see below)
The bad:
- As long as you have steady hand-eye coordination, I think it is completely safe, but just the fact that you have to hold the knife upside-down is a little dangerous preposition for some people (also depends on the knife handle and backside shape)
- The true reason for this rating: I think it's shaving too much metal from my santoku knife, which makes me think this sharpening angle is not made for santoku. I didn't want to risk ruining the santoku angle so I'm using a Wuesthof model instead. I wish I had another non-santoku knife to try this on.
